What is the Benefit of joining and moving to a greek house? Once you move in do you have to control all of the other greek houe members aswell as your own sim?

You need no funds to join a Greek house. So a sim can benefit from a house with pelnty of facilities

Once you move in do you have to control all of the other greek houe members aswell as your own sim?

Short answer is yes ... but no. If you don't control a sim then, so long as you leave free will on, sims you ignore will get on with their own lives.

They will? I thought they didn't get the skill points they needed and stood around getting stinky and hungry.

Do they really take care of themselves?

It depends on their personality points. A sim with low neat points will stand around with BO surrounded by dirty dishes. A neat sim will clean autonomously, even in a greek house. :)

I didn't mean clean. I meant, take care of their bodily needs on their own (before they're surrounded by a green stinky cloud), and gain skill points they actually need.

When I leave my sims to their own devices they read a book or watch TV. They don't autonomously try for skill points.
